Soak beans at RT (22C) for 17 h, starting at 4:00 pm in distilled water
Remove any stone seeds and record number removed
Weigh the remaining soaked beans and record weight
Grind with 1/2 volume of additional water in Waring blender for 2 minutes
Add additional 1/2 volume of water and grind for 0.5 minutes
Heat in boiling water bath; hold for 5min after reaching 90C
Pass hot slurry through juice extractor
Put okara through a second time
Cool soymilk to RT
Measure pH and solids (brix)
Divide into three 25ml aliguots in 60 ml specimen container and put in fridge for 1 hr
Add MgCl2 solutions (0.25%, 0.15% or 0.10% w/v) and mix well (0.25ml of stock solution)
Heat in 80C water bath for 1h to coagulate
Cool at RT for 1h
